A Guided Beer and Cheese Pairing: Barrel Aged Nutcracker Porter and Roquefort

Not sure what to eat with your bottle of Barrel Aged Nutcracker Porter? Not sure you should eat anything with your beer?

Allow us to change your mind about that one.

It’s true that a solid beer should stand alone on its own flavourful merits. No argument here. But something magical happens when amazing flavours are layered. They can intensify and uncover tastes that lie within your favourite consumables. Sometimes, the pairing seems outlandish at first, but once you try it and discover the alchemy on your tongue, you will be creating new flavour combos you would have never thought possible.

Try this at home:

1) Take one bottle of Barrel Aged Nutcracker Porter and open it. Take a huge sniff. Then, take a taste. What flavours do you get? A smoky, earthy note from the single malt whiskey barrel should pop right out. There should be some subtle cinnamon notes on your tongue, towards the end, as well as some roasty character from the malt. The main character in this beer are the whiskey notes. Be warned, this is not your vanilla infused bourbon barrel. This is smoky, malty dryness, sticking to your tongue. Something as strong as that needs a equally characterful partner. A subtle flavour partner would get lost in all that peaty smoke.

2) Apply the Roquefort Blue cheese. A pungent, salty Roquefort can stand up quite well to the intensity of the whiskey notes. The beer is adding a subtle, smoky top note to the cheese, the cheese is making the whiskey barrel flavours even more heightened and enigmatic. It’s a win-win, folks. Do right by your cheese and make sure you consume at room temperature. Cold cheese is hiding a depth of flavour that you will be missing.

October Seasonal Release

Our Oaktoberfest Lager is now available at the brewery!

Inspired by the Märzenbier style, the Oaktoberfest Lager has a bready aroma off the nose and golden toffee flavors within. This beer has sizable body, but with a  crisp clean finish and extra carbonation. We used 100% German Munich malt, Pilsner malt, Caramunich malt and Tettanger hops to create this seasonal beer, available only for a limited time at the brewery retail store. We also have 10 Bitter Years available for purchase. Those are two very delicious reasons to stop by the brewery today!
